Munchie Monday: Things I wish I would have known about cooking

So seven or so years ago I got married and as a result had all of these brand spankin new pots, pans, mixing bowls, utensils…yada, yada. I was super excited to use them…

If only I knew how.

At that point I think my master chef skills consisted of Mac and Cheese, spaghetti (from the jar), Hamburger Helper and maybe sandwiches.

Fortunately for me, Mr. Sauer sincerely likes those things and now that I have a few more dishes under my belt he still requests them every so often. Yes. He requests Hamburger Helper…even if I have the ingredients to make the “real” version of the same darn thing. It’s the simple things friends. πŸ™‚

So I began thinking the other day of allllll the lessons I’ve slowly learned about cooking and wishing I would have known all of these little, but sometimes significant things and then I thought I’d share them.

Here ya go (some of these may be obvious…I’m a slow learner):

  • How to cook vegetables. Who knew you could boil, bake, grill, broil…etc.
  • Easy Peesy does NOT have to mean casserole.
  • I don’t, in any way like to bake….BUT my hubby loves baked goods and turns out I make a mean cobbler. πŸ˜‰
  • Parchment paper and wax paper are two VERY different things!
  • Food on the fly=broil (unless your oven is dirty, then broil equals smoke detector and opening windows)
  • Add salt and a tad bit of oil to boiling noodles. They taste so much better!
  • There is a healthier way to make almost everything and it’s worth trying.
  • Flax seed can be used as an egg replacement and then I can eat my cookie dough! Whoot!
  • NEVER try new recipes for guests. Just don’t.
  • When a recipe says drizzle oil…seriously drizzle…you could start a fire. Remember: drizzle or sizzle.
  • Read the entire recipe before starting it. I’m not sure how many times I’ve realized mid-recipe that I am not able to finish it.
  • If your hubby likes to cook…LET him every so often.
  • How to sear meat.
  • If you mess up, try it again, it can only get better.
  • All the ways to cook eggs!

last but not least…the one it took my husband years to tell me.

  • I over salt. Like WAY over salt. 😦 Boo. It tastes perfect to me! So now we salt our own food. πŸ™‚
I’m sure there is so much more. I’ve burned too many things, and set off the smoke detecter so much that there has to be more. But that’s all for now.

I Β like Pinterest but I think it’s is a huge waste of time if you never do anything with it so this entire month is Pinterest recipe month. I’ll let you know how it goes!

Munchie Monday: things get out of hand in the face of deliciousness

I am excited about this Munchie Monday! I am excited about this food! This week I got a little TOO excited about some of it..

I have been trying DESPERATELY to shed a final few pounds of baby weight…although I’m at my pre-pregnancy weight and my body looks NOTHING like it used to! WHAT’S UP WITH THAT? I’ve been walking, running, and eliminating some of the most delicious foods on the planet only to still have a very different body. 😦 Not ideal friends…but reality.

One of the main things I’ve been doing is staying away from carbs..not 100% but enough that it’s working. Veggies and fruits have carbs so I can’t cut those out! They are too yummy. πŸ™‚

So this week I for some odd reason had the desire to make Adam banana bread. I love bb and I just assumed he would too. Doesn’t everyone? But why did I think it would be easy to NOT eat a favorite food. Come on girl…think. So I made this oh so delicious, moist, better than a breeze in the hot summer heat banana bread. I set it to the side but I was only fooling myself. Five totally worth it slices later I deemed that day a “cheat day”. Isn’t that what all girls do the moment they indulge and stray from their diet? πŸ˜‰

Let me show you the bread…and the recipe. It is THE BEST. Maybe you should make some. (unless you’re on a diet…)

Here is the recipe. I left out the nuts..because I didn’t have any but I’m sure it would only make it tastier.

Oh, and Adam did like the bread…he ate it right up. πŸ™‚

Later in the week I rounded up my cheating on my diet thoughts and got back to business.

That’s when I decided to make a most delicious, a lot like a restaurant but WAY cheaper salmon salad.

We all know how to make a salad but I’ll go ahead and tell you what I put on mine.

  • Lettuce of your choice, I prefer a mixture of different types.
  • Strawberries
  • Slivered almonds
  • Balsalmic Vinegarette Dressing
  • Salmon (drizzled with olive oil and a bit of freshly ground pepper and broiled for 10-12 minutes)

Put that all together and voila!

Makes me want another one right now. πŸ™‚

Emerson also tasted something new this week.

Okay. I have never seen a baby eat these but I was under the impression they just slurp it out or something. I think I was wrong? Anybody mind telling me what the appropriate way to do this is? Just put it in a bowl?

I know I did it wrong because this happened…

He did like it though!

Anywho..that’s a bit of our week in the food department!

Munchie Monday : health nut in training

First off…what’s a Munchie Monday? Adam came up with it to be honest. He told me lots of things happen with me involving food (not in a mean way) and I’d probably always have something to write about. So I’m doing Munchie Monday as a day to write about anything food related…maybe a recipe I like, maybe a food flop (which happens…oh, I don’t know like every week), maybe something about Emerson’s food…just whatever! No rules! My favorite way to do things! πŸ˜‰ Oh, and I will do this as consistently as possible but let’s be real…I’ll skip a few.

So secondly, I am nowhere near a health nut. I am however trying to learn more about making snacks and other foods at home instead of buying so many processed foods. A lot of my practice is on snack type foods (snackies) because Emerson will be eating them in the future but I have a while to perfect them before I get a very honest consumer. I also make his baby food (as I have mentioned before) and am trying out other things as I go. So why do all of this? It’s a lot of work! For one it’s actually WAY cheaper! My favorite home made snackie at the moment is granola bars and I can make the equivalent of two store bought boxes for less than a dollar, and they taste so so yummy! Also, it’s great to get all of the “extras” out of his food. I know they won’t kill him but I also know it’s better for him not to have them. Our fave site currently for tons of homemade snacks, baby food, and even adult meals is Weelicious . It rocks, check it out if you haven’t. You should also check out our current favorite granola bars at my friends blog here . She does a recipe round-up every now and again (which is how you can find the gb since I don’t know how to do the link that way) and has some yummy recipes!

Other health nut-ish things…

We eat LOTS of veggies and not quite so much meat, cheese, carbs, and sugary stuff! There was a time I didn’t think you could make a meal without that stuff AND some sugary dessert, and casseroles, pot pies, pasta, and sweets were a staple! I am learning how to cook with veggies I never knew about and I love it! haha Like I said we are NOT really health nuts but we certainly don’t eat junk too, too often anymore. Well..Adam has his bag of chips and a pop now and again but he has even jumped on board with healthiness! And I personally have developed such a liking for veggies that many times I crave a sweet red pepper or carrots as a snack instead of chocolate now….but not always. πŸ˜‰ And sometimes Sonic happy hour is still calling my name…. Hey, it’s all about a moderation.

I think some of our main things that we do are with Emerson while he is little. We want to establish a healthy eater and THEN bring other things into the mix. We aren’t anti pop or anti candy forever, but for now it’s a NO. NO. NO. He’ll get good, healthy snacks for while and later on we will add the other stuff…well, pop might be a longer wait but eventually he can have a little here and there.

I suppose the last thing is the big organic craze. I’d love to jump on this band wagon but let’s just be honest, it’s a bit (a lot) pricey! I have learned there are certain ways to save when buying organic and certain things that aren’t worth the $. Other than that I’m still checking into it and currently still looking at the organic milk and eggs with sticker shock. Got any good tips for me? I did find a few here after searching the term “organic” on this blog. She gives lots of tips on how to save! I also have found at our local grocery store that many organic veggies that they don’t sell enough of go on “managers special”. They are still look perfect and are SUCH a steal. I got a pack of 4 red bell peppers for 99 cents the other day! I was pumped. (anyone else get a little too excited about a good deal?)

Anywho, that’s how we are becoming very lax “health nuts”.
